Coffee Origin

Coffee berries, which contain the coffee seeds or "beans", are produced by several species of small evergreen bush of the genus Coffea. The two most commonly grown are the highly regarded Coffea arabica, and the "robusta" form of the hardier Coffea canephora. Once ripe, coffee berries are picked, processed, and dried. The seeds are then roasted to varying degrees, depending on the desired flavor. They are then ground and brewed to create coffee. Coffee can be prepared and presented in a variety of ways.

Green unroasted coffee is one of the most traded agricultural commodities in the world. Due to its caffeine content, coffee often has a stimulating effect on humans. Today, coffee is one of the most popular beverages worldwide.

Gourmet and Specialty Coffee

"Specialty coffee" was first used in 1974 by Erna Knutsen in an issue of Tea & Coffee Trade Journal. Knutsen used this term to describe beans of the best flavor which are produced in special microclimates.

Specialty coffee is the term commonly used to refer to "gourmet" or "premium" coffee. According to the Specialty Coffee Association of America (SCAA), coffee which scores 80 points or above on a 100-point scale is graded "specialty." Specialty coffees are grown in special and ideal climates, and are distinctive because of their full cup taste and little to no defects. The unique flavors and tastes are a result of the special characteristics and composition of the soils in which they are produced.

Fair Trade and Organic Coffee

To promote and self-regulate the industry, growers, exporters, roasters, retailers and equipment suppliers have established trade associations. These associations exist in both coffee-consuming and producing countries.

Organic Coffee is coffee produced without the aid of unnatural chemical substances. First, organic coffee is free of harmful pesticides. Second, it is free of unnatural herbicides. For instance, to avoid the need for herbicides, many coffee farmers can simply use the shade of other crops. Third, organic coffee does not use unnatural additives or other chemicals when the berries are roasted and otherwise processed. Mass-market coffees, in contrast, may contain traces of herbicides and pesticides as well as artificial ingredients.
